Carrot Thoran (Stir Fry)

Carrot stir fry is a regular dish at our home.Its not much spicy and kids love the most.When you search for variety in our diet,this can be added.This is a very healthy stir fry.The usual version is on stove top but here I tried the microwave version which made the work easier.Try and enjoy !!

Ingredients
Carrots 5-6 fine chopped
onion 1/2chopped
green chilli 3-4
coconut 3tsp
curry leaves
turmeric powder 1/2tsp
mustard 1/2tsp
salt
oil 2tsp



Method
Cook the chopped carrots ,onion ,green chilli,coconut together in  a microwave safe bowl with salt and turmeric powder for 5minutes.
Place a pan on medium heat and splutter mustard.Add curry leaves.
Add the cooked veggie mix and dry the water completely.


  • servings 4 adults
TIPS
You can also cook on stove top after the mustard is popped up.Add the onions,cook till translucent followed by  all ingredients,cover and cook for 6-7mts.
