Cucumber- Lime Paletas | Cucumber Ice Pops(Posicles)

Summer time-Ice pops time !!
Here the temperatures are going high everyday and there is high demand for ice creams,ice pops,sorbet and so on.Today's post is a similar one to beat the heat- Cucumber-Lime Paletas.A Paleta is a Latin American ice pops usually made from fresh fruits.Paletas comes from the 'palo' means 'stick' and the diminuitive ending 'eta' refers to the little flat stick frozen in these pops.I have used cucumbers in this recipe but you always use any other fruit.The cucumber,ginger and lime combo is very refreshing and quenches thirst.I bookmarked this recipe from a magazine last year and almost forgot about it until I made these recently.They came out really good and are perfect treat for summers.Try these out,am sure kids and grown ups will equally enjoy !!



Preparation time~10 minutes
Cooking time~5 minutes
Serves~4 pops
Ingredients
cucumber 1 medium sized
ginger 1/2" piece or 3/4 tsp
lime 1/4 cup

 for simple syrup (1/3 cup)
granulated white sugar 3/4 cup
water 1/2 cup


Method
  • TO MAKE SIMPLE SUGAR SYRUP-Boil the water and sugar in a sauce pan to make syrup.Stir until sugar is dissolved and the syrup turns thick.Switch off flame and let it cool.
  • Blend the peeled cucumber,ginger and lime juice.Strain this mixture in a bowl and add the sugar syrup(use as required). 
  • Pour in ice pops mold and freeze overnight.Once freezed, hold the pops under hot water or place in a bowl of hot water for half a minute.Twist and remove to enjoy !!

Oh, my dear. I don't know where are you living, but here in Spain apart from the North, is very, very hot. I've been on the beach early this morning and watter is hot too.
The name we use is "polos" and I want to make and use my moulds. So that, if you search "polos", you'll find lots of recipes.
Your recipe is amazing. A very original mixture of ingredients. I wish to give them a try.
