Shrimp Prawn Masala | Chemmeen Masala

All non vegetarians love prawns,so does my family.My children too love it as there are no bones in it.This is a real good recipe that can be served for chapatis/naan.The masala is well mixed with the prawns and tastes delicious.Enjoy making this masala!!


Ingredients
prawns 1lb
onion 1chopped
green chilli 3-4 cut long
tomato 1chopped
chilli powder 1tsp
turmeric powder 1/2tsp
garam masala powder 1/2tsp
coriander leaves
salt to taste
oil

Method
Wash the shrimp using salt n lime.Boil the prawns with enough water,turmeric powder and salt for 5-7minutes.Drain the water and keep aside.Pour oil in a pan and add the chopped onion.Wait until it is slightly browned.Add the green chilli,tomato and let it get cooked and become mushy.Add the chiili powder,turmeric powder,garam masala powder.Put off the stove.Leave to cool and grind the mixture to a thick paste(without adding water).Now add the paste back to the pan and add in the cooked shrimp.Cook covered for 2-3 minute.Open the lid and garnish with coriander leaves/cilantro.

  • serves 4adults


TIPS
  1. You can use cooked shrimp and try using larger sized prawns.
  2. Chicken masala can be replaced for garam masala.

Spring Onion(green onion) Stir-Fry | Ulli Thandu Thoran

Green onions (Spring onions) are very good for health and so does all green leafy vegetables. Here is a very simple recipe. Children do love it as it is not much spicy and has a mild sweet tinge as it gets cooked. This serves as a wonderful side dish with steamed rice. Do give it a try and enjoy !!

Ingredients
green onion / ulli thandu (spring onion) 400 gms
onion 1 small, chopped
chilli powder 3/4 tsp
turmeric powder 1/2tsp
salt to taste
mustard 1/2 tsp
coconut oil 1.5 tbsp
curry leaves, a sprig
red dry chillies 1; broken

to coarsely grind
grated coconut 3/4 cup
shallots 4-5
garlic cloves 2

Method
  • Wash the green onions thoroughly and snap off the base stems if it is hard woody (about 2")cut it into round small pieces, keep aside. 
  • In a blender, add grated coconut, garlic cloves and shallots. Coarsely grind by pulsing and don't add any water. 
  • Heat oil in a pan and splutter mustard seeds. Add the curry leaves and dry red chilli. Sauté 30 seconds and add the chopped onions. Sauté a minute until translucent. Add the turmeric powder and chilli powder. Add the chopped green onions and mix well.
  •  Cover and cook on low heat for 3–4 minutes. Uncover the lid, add salt then and the coarsely ground mix. Cover with a lid and cook for 3–5 minutes. Adjust salt if needed and don't overcook the chopped onions. Dry it on medium heat and is ready to serve.
NOTES
* Add salt only when the spring onions are half cooked, else you end up adding more salt.
* You can use chopped shallots instead of onions too, but I only add shallots in the ground mix.
* You can use microwave to prepare this dish. In a microwave safe bowl, cook the green onions on high for a minute. Then add salt and coarsely ground paste, cook again another minute. Check salt and adjust. Finally, temper and add over the cooked green onions. 
* You can add green chillies when grinding the mix instead of chilli powder if you wish.
 




Groundnut (Peanut) Chaat


Groundnuts are a good source of fats..This is a tasty recipe as an easy snack.Once I had brought a big packet n wondered how to finish it off..dn came out with this recipe.

Ingredients
groundnut 1 cup soaked in water for 1 hr
coconut grated 3tsp
chaat masala 1tsp
chilli powder 1tsp
lime juice 1tsp
salt to taste



Method

Cook the soaked groundnuts in a cooker for 3 whistles.
Drain the water.
Add grated coconut,chilli powder ,chaat masala and lime juice.

Steamed Banana Cake in Pressure Cooker

Cake has been all time my family's favorite.This cake is steamed n was made as a snack.And it turned out to be real good and healthy recipe for kids.My kids are reluctant to eat the over ripe bananas and this was the easiest way to finish them off without even the children knowing it.



Ingredients
rice powder 1 cup
jaggery 1/2 cup
banana 2 mashed
baking soda 1tsp
raisins and cashew 1/4 cup
cumin powder 1tsp


Method
Soak the jaggery in half a cup of water and drain the impurities.
Mix the rice powder ,mashed bananas,baking soda.
Add the cumin powder and raisins,cashew.
Keep aside for 10 mts.
Pour it in a idli pan or a cake pan after oiling and and garnish with cashews.Steam in a pressure cooker.(without whistle)/idli cooker for 20mts.
Check if it is done with a tooth pick in the centre (should come out clean)
Remove from stove ,cool it completely.
Cut into pieces and ready to serve.

TIPS
*You can use cardamom powder instead of cumin powder .
*You can also bake the same at 350 degrees F for 45 minutes.
