Beans Thoran | Green Bean(String Bean) Stir Fry

Beans thoran is a commonly made thoran or stir fry with grated coconut in Keralite homes.This is a simple side dish with steamed rice and enjoyed.Green beans are an excellent source of dietary fiber,folates,iron and vitamin A & B complex (source:here).Including this in diet is a real addition to all minerals and vitamins.This simple side dish is liked by all at home.Do try & enjoy !!


Ingredients
beans 1lb(500g)
grated coconut 1/2 cup
garlic sliced 3-4
shallots 6-7 or onion 1/2 chopped
green chillies 4-5 vertical slit
turmeric powder 1/2 tsp
mustard seeds 1 tsp
curry leaves few sprigs
salt to taste
oil 2-3 tsp


Method
  • Wash the beans,remove the side fibers and the stalk & tail.Chop the beans very small.I usually chop it at an angle but you can cut round circular shapes.Keep aside.Similarly cut the green chillies,shallots,garlic.
  • Heat oil in a pan and splutter mustard seeds.Add in the sliced garlic and shallots/onion.Saute until translucent.
  • Add in turmeric powder and saute for a minute.
  • Add in the chopped beans,grated coconut and add a splash of water (1/4 cup),add salt.Cover and leave on low medium flame for 6-7 mins ot till cooked.
  • Check if done,else toss it well and cover again.Uncover,dry the water and serve warm with steamed rice !!
NOTES
* The beans should be cut very small else it will take time to cook.
