Kozhukkatta /Steamed Rice dumplings with Coconut & Jaggery Filling

Kozhukatta is a very well versed name to all South Indians and these are the perfect healthy guilt free snack too..Mom used to prepare these for breakfast or as snack and was a regular affair.Only after marriage did I come to know its prepared on the eve of Palm Sunday,the reason behind is still unknown:). Palm Sunday/Kurutholla Perunal  falls the sunday previous to Easter and that was yesterday!!So thought to prepare these & share this sweet dumplings..


Ingredients
Rice flour (same as for idiyappam,roasted one) 1 cup
water 1 - 1 1/2 cup
salt as required
For filling
coconut shredded 3/4 cup (I used the sweetened coconut flakes)
jaggery 3/4 cup (100gm) (I used just 1/2 cup as coconut was sweetened)
cardamom  1 tsp powdered
warm water 1/3 cup


Method
-Dilute the jaggery in the warm water and strain for impurities.
-Boil this liquid over medium heat and add the coconut in it,keep stirring till the liquid dries up and is ready for filling.
-In the mean time,Boil water required for dough in another pan and take the flour in a wide bowl,add salt
-Pour the hot water in it and mix with a wooden spoon.Wait for 5 minutes after pouring the water.Knead it into a dough not very sticky.
-Make small balls out of it and flatten it in your palm.Fold the sides inwards to form a cup .Scoop a spoon of filling into it and close it in a neat ball.Repeat the same for other balls and place it in a idli steamer with water below.
-Steam for 10-12 minutes till it turns to an off white color or looks cooked.
-Remove from steamer & Serve it as snack or breakfast!!
