Egg Plant fritters / Vazhuthananga Bhajji

Egg plant commonly known as brinjal in India is a  very nutritious and healthy veggie.The origin of this veggie can be traced back from asian countries and here it is known as egg plant as it refers to fruits of the 18th century that resemble to that of the hen's or goose's eggs.The egg plant fritters is easy to prepare recipe and can be used as snack or a side stir fry with rice.






Ingredients
Egg plant 1/2 (I used the large one) round cut or cut quarters
egg 1
garlic paste 1/2tsp
chilly powder 1/2 tsp
pepper powder 1/2 tsp
salt as per taste
bread crumbs 1/2 cup
oil for shallow frying 3 tbsp


Method
Wash and cut the egg plant into thin rounds or semicircle or quarters.Soak them in a bowl of water and then whisk an egg ,add in the spices ,salt.Dip each cut slice of egg plant into this and roll it in bread crumbs.Heat oil in a kadai and shallow fry them by turning both sides.place them on a paper towel and serve.

NOTES
* You can also omit the bread crumbs part and only dip it in egg mixture and shallow fry them.I did a few like that as shown in pics .Both  tasted good but those with the bread crumbs coating had more oil in them.
