Cranberry Pistachio Biscotti- Butterless

The name 'Biscotti' is derived from 'bis' meaning twice in Italian and 'cotto' meaning baked or cooked.It is generally a long dry,hard ,twice baked cookie with a curved top and flat bottom and enjoyed dipping in wine,coffee or tea.These look similar to the rusk which we get in India.Cranberry Pistachio Biscotti is my first trial in terms of biscotti and there is no butter in it,eggs are used as the binder.The dough is first rolled into a log shape and baked till firm.After slight cooling,it is cut into diagonal slices ,baked again to get a crispy ,dry cookie with longer shelf life.So,friends enjoy this lovely recipe !!





Ingredients
all purpose flour 1 3/4 cup
granulated sugar 2/3 cup
egg 2
baking powder 1 tsp
shelled pistachio 1/2 cup coarsely chopped
dried cranberries 1/2 cup
vanilla extract 1 tsp
salt 1/4tsp



Method

-Sift the flour with baking powder and salt and keep aside.

-Whisk the eggs and sugar together to get a thick ,pale and fluffy.Add in the vanilla extract.

-Add the flour into it and mix until smooth.Fold in the chopped pitachio and cranberries.

-Transfer the dough into a well floured surface and roll into a log shape(the dough may be sticky,flour your hand before you shape) about 30 cms long and 9cms wide.

-Pre heat oven to 350 degrees F and place the log in a baking sheet with parchment paper and bake for 20-25 minutes in the center of the oven.

-Remove from oven and cool on wire rack for 10 minutes.

-Reduce the oven temperature to 325 degrees F and transfer the baked log on a cutting board ,cut 1/2'' slices on the diagonal.Place them on the baking sheet with cut side down and put it in the oven.

-Bake for 8-10 minutes.Turn slices after removing .Place again and bake for 8-10minutes.

-Remove from oven,cool on wire rack completely .Store in air tight containers.


Notes

* You can store these for several weeks.
