Orange Cake (Eggless) | Step by Step Pics

Oranges are best eaten just as a fruit but if you have kids who aren't a big fan of these nor do like the orange juice then you start thinking off better ways to sneak in oranges in their diet to give the required amount of vitamin C.This cake has been a long awaited bake and I did try a few recipes in the past too with wheat flour alone but the outcome was more dense than this one and somehow I wasn't convinced with orange cake color too.Finally,I ended up trying out this recipe which came out perfect moist and delicious with the real natural colors.This is a simple eggless tea cake recipe that you can whip up with no fancy gadgets and has the least efforts too if you use store brought orange juice.And,I am not much into ready made juices and so pureed fresh oranges to get the orange juice.Orange zest adds a nice flavor to the cake and I have already baked this recipe twice by now.An orange glaze can be added on the top to give a neat glossy finish and can be taken to a next level altogether.I just avoided that to reduce the sugar amounts but have mentioned in the notes the measures so that you can try out if you wish.Enjoy this yummy cake !!



Preparation time~15 minutes
Baking time~45 minutes
Serves ~a loaf 9*5*3
Ingredients
wheat flour 1 cup
all purpose flour 1/2 cup
baking powder 1.5 tsp
baking soda 1/2 tsp (can reduce to 1/4 tsp)
sugar 3/4 cup
yogurt 3/4 cup
oil 1/2 cup
orange juice 1/2 cup
orange zest 1tsp
vanilla essence 1/2 tsp
salt a pinch


Method
  •  Sift the flours twice with baking soda,salt and baking powder.Add the grated orange zest and leave aside.
  • Now,puree the oranges to get half cup of orange juice.I used 2 oranges.
  • In another bowl,mix the yogurt and sugar until the sugar dissolves completely.Add in the oil and orange juice,vanilla essence.Mix well.
  • Pre heat oven to 350 degrees F and line a bread loaf pan 9*5*3 or round pan 8" size with parchment paper at the bottom and butter the sides.
  • Start mixing the dry ingredients with the wet ingredients until its well combined.
  • Pour in the prepared baking tray and tap on the counter top twice to deflate any air bubbles.
  • Place in oven and bake for 40-45 minutes.Mine took 45 minutes.
  • Cool on wire rack and then cut in slices.Serve with tea.


NOTES
* You can use all purpose flour alone for more lighter texture.
* Use orange extract instead of vanilla essence for a better flavor.
* The orange glaze can be prepared by mixing icing sugar(2 cups) with orange juice(1/2 cup).Just mix and our over the cake once it is out of the oven.
* If the yogurt is thick and the batter turns thick,then add few tbsps of water to get the right consistency.I didn't add any water.

Here in Valencia we have lots of orange trees. Our oranges are marvellous and in our kitchens we usually use oranges to make salty and sweet dishes.
Your cake is one of my favorites but I've never tried it without eggs. Love it!
