Fish Molly & Traditional Puttu | Fish curry with coconut milk & Steamed Rice flour with coconut | Kerala Breakfast Menu

Fish molly and Puttu or Fish cooked in coconut milk and Steamed rice flour with coconut flakes is a delicious authentic combination of Kerala.Puttu is usually prepared in a cylindrical puttu maker /cheratta (like shell of coconut) puttu maker or can be steamed in idli cooker with banana leaves.The first two gives a nice shape .I had the cherata puttu maker and prepared in it.The puttu maker is placed on a closed pressure cooker with water boiling in it.(remove the weight and place the puttu maker).Fish molly is a recipe which you can serve with breads,appam, or steamed rice or this combo.The duo makes a perfect combo, and a very healthy recipe esp with kids.

rice flour 1 cup (preferably chemba rice flour if available;refer notes)
grated coconut 1/3 cup
water 1/3 cup


For marination
Tilapia fillets - 3 cut medium
pepper powder 1/2 tsp
turmeric powder 1/4 tsp
lemon juice 1/4 of a lemon

For sauce / gravy
Onion 1 medium, thin sliced
tomato 2 medium round cut
ginger garlic paste 1 1/2 tsp
thick coconut milk 1/2 cup
thin coconut milk 1 cup
pepper powder 1/2 tsp
turmeric powder 1/2 tsp
garam masala 1/2 tsp
fennel seeds 1/2 tsp
oil 7 tsp (preferably coconut oil)
curry leaves

Take the rice flour(refer notes) in a bowl,add salt to it,mix well.Take water in a cup,sprinkle slowly into the rice flour little by little,such that it is just moist and not drenched.(check in between by trying to make a ball with your hands,if it holds together,stop pouring water into the flour.)
Place a pressure cooker or idli cooker with 1/2 filled water on stove.I used pressure cooker,close the lid.Take the puttu maker,add grated coconut at the base,fill in some flour,then again coconut alternate with flour till you reach the top.
Close the puttu maker and place on the pressure cooker after removing the weight.
Wait till the steam seeps through the flour and reaches the top.It takes around 5-6 mins to cook through.Remove from heat and poke the base of the maker with a pointer or knife into a plate so that it comes out in proper shape.
Puttu is ready to serve.

Marinate the fish using the ingredients listed and keep for half an hour.Heat oil in a non stick pan and shallow fry the fish pieces till its caramelized (donot fry brown).Place on a paper towel.
Heat oil in another kadai,splutter fennel seeds ,saute onions till translucent and add curry leaves,ginger garlic paste.Add in the tomatoes (half) and give a quick toss.Add all spice powders ,salt and stir.
Add the fish pieces into it and add the thin coconut milk.
Let the fish cook in this gravy for 5-10 minutes till the mixture starts to thicken.
Add in the remaining tomatoes and cook for 5 mins.
Add the thick coconut milk on low flame and put off the flame.
The yellowish  creamy colour of the gravy with fish pieces floating is very appealing ,and is ready to serve with puttu !!!

*To make rice flour:Wash and soak plain rice /matta rice in water for 2-3 hours.Drain all the water and grind it in a mixer.Sieve the powder(use the 2nd sieve,where you will get bigger bits than the smooth ie it should be slightly coarse).Add the unground rice to the mixer and add soaked rice,repeat the process till you finish grinding all the soaked rice.Heat a pan and dry roast the flour for 5mins or till the raw smell disappears on medium flame,keep stirring throughout.This flour can be stored for 4-5 days maximum.(You can use this flour for making unniyappams if you have left overs after making puttu)
* Store brought plain rice flour works but it doesn't give the soft texture of puttu as it is ground smooth and is roasted as for idiyappam.You can always use store brought puttu podi for making puttu,prefer to buy the chemba (red)flour.
* Don't add water at a stretch into the rice flour,add little by little.otherwise you will have cake batter.
* Lower the flame for making fish molly before adding coconut milk so that it doesnot curdle.
