Plantains(ethakka/ nendran banana) are very low in saturated fat,cholesterol and sodium .It is a good source of vitamin A,vitamin C ,vitamin B6 and potassium.The only bad point is it contains large amount of sugars and hence,not suitable for diabetics.
Pancakes are familiar with all and there are numerous varieties to it.Yesterday,I had some sweet plantains with me and thought of blasting it for breakfast.All at home enjoyed this healthy recipe with honey.
Ingredients
wheat flour 2 cups
sweet plantain 2 steamed n mashed
sugar 2 tsp (optional)
baking soda 1/2 tsp
salt
for dip
honey 3tsp/ hersheys spread /nutella
Method
Steam the plantains in an Idli cooker and remove the seeds,mash the rest and place it in a bowl.
Take wheat flour and other ingredients including the mashed plantain and prepare a batter as for dosa.
Place a non stick pan on medium flame and spread the batter like thick dosa.
Flip the other side after 2 minutes once you see bubbles break up.
Repeat the same with other pancakes.
Serve it with honey or pineapple topping.
Servings 10 pancakes
TIPS
You can replace bananas for plantains.I have tried banana pancakes too(see below in pic).In case you use bananas,then simply blend two bananas in a blender without water and then add to the batter.Rest of the steps remain the same.
