Strawberry Shrikhand & EP turns 4 | Quick Healthy Dessert

There were so many things going around last week that I actually forgot my blog baby's birthday(none to blame other than me).Better late than never,I would like to give a  shout out to everyone who had been an important part of this journey.Its you guys,who helped me mold,nurture and cherish this little space.Little did I know about blogging and now I feel confident to tell someone about blogging nevertheless I am still ignorant about many technical aspects.Started this space(4 years ago),as the best way to kill time and to experiment recipes.Gradually leisure changed to passion,now enjoying every bit of this healthy drive.I don't want to bore you all with my non stop blah blah about me and my space,so going straight to the topic.Shrikhand is one of my favorite quick dessert that whips up instantly if you have greek yogurt(hung curd/chakka) at home.This recipe requires hardly any cooking time,no fancy gadgets and the ingredients list is very short.There is no use of gelatin or agar agar but still the texture is almost like mousse;light and fluffy.I already have a mango shrikhand(amrakhand) recipe in the blog but that has no cooking unlike this.Kids love this too,they licked their bowl clean.I have added strawberries to create the twist and the rest remains the same.Do give this a try as strawberries are in season and enjoy !!


Preparation time~ 1 hour(if using greek yogurt)
Cooking time & assembling ~5 minutes + 10 minutes
Serves ~ 2
Ingredients
strawberry 1.5 cup chopped
*greek yogurt thick 1.5 cup
icing sugar /powdered sugar 2tbsp
granulated sugar 1tbsp


Method
  • If you are using greek yogurt then pour about 2 cups of yogurt in a muslin cloth and hang it over the sink tap or place in a sieve for 1 hour and place a bowl down to collect the whey(the result should be 1.5 cups of thick greek yogurt).If you are using regular yogurt then pour 3-3.5 cups of yogurt in the muslin cloth  and hang for 5-6 hours or overnight(if you are leaving overnight refrigerate this process else the yogurt may turn sour or if you live in cold weather area then its fine).
  • Wash,hull and chop the strawberries.Add this to a pan and add sugar,place on low heat.Wait til the strawberry releases water slightly and gets soft.Switch off flame and let it cool.
  • Blend the strawberries in a blender and strain the mixture.In the mean time,whisk the yogurt with a spoon and add the strawberry puree little by little.Keep folding to blend well.Add powdered sugar to this and combine well.
  • Add to cups and chill for 2 hours to set.Serve chilled with sliced strawberries.



NOTES
* I didn't add any water while cooking strawberries.It is wise to avoid water else the result mixture may turn watery and can ruin the shrikhand texture.
* Adding icing sugar stabilises the consistency of the shrikhand.If you are using regular powdered sugar then add a tsp of corn flour,mix and then add to the yogurt.
* You can add a drop of red color to make it more appealing but I haven't added any color(the natural color).
* You can add 2 drops of strawberry essence to add flavor if you have too.
