Oatmeal Raisins Waffles | Eggless Breakfast Recipes

I have been using my waffle maker once in a fortnight as its a handy gadget in kitchen to whip up a quick breakfast. But clicking pics for breakfast is the most toughest job that I can ever do.I love trying healthy waffles unlike the basic recipe of waffles. These waffles were experimented during the lent period and I actually forgot to make it again until recently. This is a super easy recipe to put together and an eggless one too.Wheat flour does make the waffles denser than all purpose flour ones(maida) like the wheat flour cakes but if you are not keen to use whole wheat flour then go ahead and use all purpose flour alone.Try these if you have a waffle maker and enjoy a healthy breakfast or make as an after school snack for kids.

Preparation time~15 minutes
Cooking time~10mins
Serves~4
Recipe source:Eggless Cooking

Ingredients
quick oats 1 cup
whole wheat flour 1 cup
all purpose flour/maida  1/2 cup
raisins 1/2 cup
baking powder 1tbsp
corn starch 1tbsp
ground cinnamon 1/2 tsp
salt 1/8tsp

whole milk 2cups
apple cider vinegar 1tsp
any neutral cooking oil 1/4 cup
honey/agave syrup 2tbsps
vanilla extract 1tsp

Method
  • Sift the flours,baking powder,corn strach,ground cinnamon and salt.Add in the quick oats,mix it well.Mix the raisins.
  • In another bowl-add the whole milk, apple cider vinegar, cooking oil, honey, vanilla extract and mix well.
  • Add the dry ingredients in the wet and start mixing.Mix until combined well without any lumps. If smaller lumps are present, ignore.Let it sit for 10-15 mins.
  • After that, heat the waffle iron as per manufacturer's instructions and pour batter in them.Cook until crisp and golden brown as per the instructions on waffle maker.(I use a 13" round waffle maker,it made 6 quarters with this batter)
  • Transfer on a plate and serve with sliced strawberries and maple syrup or honey or dust with powdered sugar !!

NOTES
* If you wish to try a vegan version, use almond milk instead of whole milk.
* Omit cinnamon if you don't like the aroma.
