Bread Pizza Sandwich

Looking for some quick after school snacks??
Pizza flavours are liked by all kids, but making pizza from scratch takes a lot of time. Moreover, pizza base may not be readily available at all times at home.Then, this sandwich becomes a great choice that can be prepared quickly if you have some bread slices. Kids would love to have a snack with pizza flavours and this can be served warm. Do give this a try and enjoy !!


Preparation time ~ 10 minutes
Cooking time ~ 10 minutes

Serves ~ 5 sandwiches
Ingredients 
bread slices 8-10
chopped capsicum 3 tbsp
corn kernels 3 tbsp
black olives 3 tbsp
chopped onion 3tbsp
pizza sauce 3-4 tbsp
pizza seasoning 2 tsp
cheese slices 5
unsalted butter 2 tbsp

Method
  • Take two bread slices. Apply softened butter on one, then spread pizza sauce.
  • Add a cheese slice and place the toppings one by one-chopped capsicum, chopped onion, black olives and corn kernels. Sprinkle the pizza seasoning on top. 
  • Apply the softened butter on other slice and apply pizza sauce. Cover this slice on top of the toppings.
  • Finally, apply softened butter on the top slice.
  • Heat a non-stick tava and place the prepare sandwich with buttered side down, touching the tava. Press with a spatula to melt the cheese slice and to keep the toppings intact. Apply butter on the top side and flip. Cook this side another 45 seconds. Remove from tava and cut in desired shapes and enjoy.
  • Repeat the same steps of making the sandwich and cook on tava until toasted. 

NOTES
* Buttering the underside of bread before applying pizza sauce is to prevent seepage of pizza sauce in the bread slices and prevents bread soggy.

Dosizza | Dosa Pizza on Stove top | Kids Friendly Recipes & Saturday Snapshots !!

Do your kids love pizza ?? If the answer is yes,then go ahead and try this simple healthy way to make pizza and getting your dosas colorful.A dosa with all the goodness of nutrition and a best way to sneak in cheese and vegetables to kids,my kids just gobbled them happily and have demanded for more.They have named this dish 'Dosizza' and am loving it.I was excited to feed them this yummy tasty dish.Everyone make dosas at home and this hardly takes an extra time to make it more delectable and kids friendly for a quick evening snack,guilt free as well.Enjoy making this fun filled dosas with kids to make it even more exciting and am sure they will ask for more.Try it !!




This week the theme for Saturday snapshots- Food photography series was cutting vegetables for cooking and here goes my entry for the same.



Ingredients
for base
dosa batter 2 cups

for topping
pizza sauce 1 cup
mozarella cheese 1 cup
parmesan cheese 1 cup
italian seasoning 2 tbsp
bell pepper 1 chopped vertically
onion 1chopped half moon size
*carrots grated 2 (optional)
oil 2-3 tsp




Method
  • Heat a pan and add the oil, add the sliced onion and bell pepper.Sauté until onion turn translucent on medium high flame (take about 3-4 minutes).
  • Heat another iron griddle/non-stick tawa.Smear oil if using an iron griddle, or omit this step if using a non-stick pan.Pour two ladles full of batter and gently spread out (about 5" round). Don't make it very thin like dosa;prefer to make it thick, otherwise it may get burned when you finish making the pizza.


  • Flip the other side when this end gets slightly done, and you're able to flip it (don't wait to get browned) and cook the other side half a minute.Turn it again and switch the flame to very low flame (THIS IS AN OPTIONAL STEP). OR You can just cook the dosa covered and thereby avoid flipping the dosa. Apply the pizza sauce on the cooked side itself.
  • Smear the pizza sauce, leaving a half inch space.Add the sautéed veggies with grated carrots. Add some italian seasoning and then cover it up with cheese.(If you take long to spread the topping, then it's better to switch off the flame till you finish spreading the topping and then put it on)
  • Keep the flame on low and cover with a lid.Wait for 5 -6 minutes to get the cheese melted and gooey, the dosa get a nice crisp base.Transfer to a plate.Cut in wedges and serve.
  • Repeat the same steps to make more dosa pizza.Serve hot and enjoy !!!
Serves ~ 6 pizza



NOTES
* You can use any favourite veggies of your kid's choice.Just try using contrasting colours to make it colourful and appealing.
* Use a nicely fermented batter to yield softer pizzas.
* You can always increase the quantity of cheese to get a more cheesy pizza.Use your desired cheese.
* Use black olives and corn kernels instead of grated carrot.
* You can use bread instead of dosa and make bread pizza, or evn replace dosa with naan to make naanizaa. Sound interesting, ryt?? Go ahead and try on.

Pizza Pull Apart Bread

Baking Pizza from scratch is a lengthy process but how about getting the same authentic flavors in a pull apart style.This is an easy recipe,where even a beginner can try and get the authentic flavors of pizza too.What more do you want,an evening quick fix where in you can dump everything and stay cool.The recipe is adapted from here and modified as per our tastes.The original recipe uses southern style biscuits instead of pizza dough but I prepared the dough using wheat flour and all purpose flour.This is a filling evening snack that can be served with some dipping sauce !!!


Ingredients
for dough
wheat flour 1 cup
all purpose flour 1 cup
active dry yeast 1 1/4 tsp
salt to taste
olive oil 1 tbsp
sugar 1tsp

to cook chicken
chicken boneless 1 cup cubed
pepper powder 1/2 tsp
salt to taste

for toppings
parmesan cheese 1/2 cup
cheddar cheese 1 cup
olives sliced 1/2 cup
bell pepper 1/2 sliced
onion 1/2 sliced
pizza sauce 3/4 cup (7 oz)(refer notes)
Italian seasoning 1 tbsp


Method

  • Make the dough- Sift the flours,add in salt.Mix the yeast ,warm water and sugar.keep aside for 10 mins till frothy.Combine in the dough ,add yeast mixture and olive oil.Make a dough,leave aside to rise for 1 hour covered.After one hour,punch down the air from the dough.Make a long log of dough and cut small pieces out of it.
  • Cook Chicken-Heat a pan and add the cut chicken pieces,pepper powder and salt.Add 1/4 cup water and cook till half done.Put off flame.drain stock
  • Add the pizza sauce in the bowl and add the cut out pieces of dough.Mix to combine.
  • Add in all the cheese(reserve a small amount of cheddar for final topping),olives,bell pepper,onion, chicken.
(Before & After bake)
  • Pre heat oven to 350 degrees F.Pour this in a greased 9"round pan ,top with Italian seasoning and leave for 25-30 minutes covered until the dough rises again.
  • Place in the oven and bake at 350 degrees F for 30-35 minutes until golden brown.
  • Top it with remaining cheddar or mozarrella if using and wait till it melts,serve hot  with some dipping sauce !!

Servings~ 9"round pan(serves 4 adults)

NOTES
* You can use southern style biscuits too instead of the flours and preparing dough.Cut in bite size pieces.That serves instant and quick.
* You can double the ingredients and make it in a bundt pan(the oven timing should be increased to 45-50 minutes) but here I have used a 9" round pan.
* I referred this site to prepare the homemade pizza sauce,the link is here.As I ran out of store brought pizza sauce(went bad),so as I used fresh tomatoes it didn't add much color but the store brought one adds more color.
* You can use mozarella cheese instead of cheddar cheese and top it up with mozarrella.
* You can use paneer instead of chicken and make a vegan style one!!

Chicken Tikka Pizza (Easy Version) | Chicken Pizza

Chicken Tikka Pizza,is a modified version of pizza in Indian style.This means a pizza with the full flavor of spices in Indian touch.And that's the greatest and tastiest thing about this pizza.We just loved each bite of this pizza and the aroma wafted all around here.Though chicken tikka in itself is a lengthy process and then making the pizza base from scratch,adding chicken tikka to the base is another tedious effort but I made a shortcut to the above tikka recipe and prepared with the same flavors in a different way.I just avoided the baking step and used stove top method.I added the same juices of the spices and added to the pizza base as sauce.You will surely love this pizza if you love Chicken tikka !!

Ingredients
for pizza base
Whole wheat flour 21/2 cups
All purpose flour 1 cup
Yeast 4 tsp(refer notes)
Salt 1 tsp
Sugar 1 tbsp
Olive oil 1 tbsp
warm water 1 1/2 cup

for tikka masala
chicken boneless 300gms(refer notes)
Yogurt 2tbsp
Lime juice half of a lime
Cumin powder 1/2 tsp
Chilly powder 1 tsp
coriander powder 3/4 tsp
Pepper powder 1 tsp
Garam masala 1/2 tsp
oil 1tsp
Butter 1 tbsp

Fenugreek leaves
pizza sauce 3tbsp

for topping
Chilly flakes 2 tsp(optional)
black pepper 1/2 tsp(optional)
Italian seasoning 2 tsp
Mozarella cheese  shredded  as required
black olives 10-12
Onion 1/2 sliced
Red bell pepper 1/2 sliced thin



Method
PREPARE THE TIKKA MASALA-
-Wash and cut the chicken in bite size pieces.Prepare a marinade using the yogurt,lime juice,chilly powder,cumin powder,garam masala,pepper powder,coriander powder and salt.Add 1tsp of oil at the end.Keep aside for 1 hour.
- Heat butter in a pan and add the chicken pieces along with marinade.Toss it well for 10 minutes on medium flame.
-The chicken masala boils and the chicken cooks half way changing color.Add the pizza sauce in it and mix well.
-Crush the fenugreek leaves in palm and add,put off flame.(There should be enough sauce to line the pizza base,don't dry it much).Cool the masala(sauce) before spreading on the base.

PREPARE THE DOUGH-
-In the mean time,sift the flours,add salt.
-Dissolve yeast and sugar in 1 cup of water,wait till it starts frothing.
-Add this mixture into the flours and knead.Add more water if required.
-Add the oil and knead to a sticky dough.Leave aside covered to rise for 1 hour.
-After an hour,punch down the air and knead again,Leave for 45 minutes.



PREPARING PIZZA-
-Punch down the air and divide the dough into 2 equal portions.
-Dust the surface with little flour and roll out the dough in a circle of 9-10" diameter and 1/4'' thick.
-Preheat oven top 425 degrees F and grease a tray with spraying oil and spread half a tsp of bread crumbs(to prevent sticking to the tray)
-Immediately transfer the pizza base to the tray and shape it with hands if at all irregular at any place.Prick with a fork in the base to avoid rising.
-Spread half sauce or masala as a thin layer leaving 1" space at the outer border.Add a thin layer of shredded mozarella cheese.
-Then add half of the sliced bell peppers,onions and the chicken pieces.
-Add the sliced olives and top it with some italian seasoning,pepper powder, chilly flakes and finish off with shredded mozarella cheese.
-Apply a thin layer of olive oil on the outer border,gives a nice crust color.
-Bake in the oven for 16-20 minutes.
-Repeat the same steps to bake another pizza and use up the remaining toppings.
-Remove from oven,cool slightly and serve warm in slices !!



Servings ~2 pizzas of 9"size 

NOTES
* I used active dry yeast .
* I have used boneless chicken thighs.
* The listed ingredients of both pizza base and topping makes 2 medium size (9") pizza.(So,divide accordingly or use half of the quantity mentioned to bake one)
* Adding pepper powder ,chilly flakes on the topping is optional if you wish to have a moderate spicy one.Otherwise you can omit that.
* You can even prepare the dough using all purpose flour alone or you can just prepare the masala and top the store brought pizza base.
* You can replace chicken in place of paneer and repeat the same steps to get a Paneer Tikka pizza.

Whole Wheat Pizza with Tofu & Mushroom Topping | Whole Wheat Pizza from Scratch

Pizza,as you all know another versatile food loved by all can be made with a wide range of  toppings.My first attempt in making pizza was the Apple Pizza,a great dessert or snacker esp for kidoos.This time I planned a savory pizza and so mushroom was my first choice.Then,thought to add these little cubes of tofu too.Tofu was not very familiar to me and so googled up to find these bits which might be helpful to some of my bloggers as well before buying.Tofu looks similar to paneer/Indian cottage cheese and is made by coagulating soy milk and then pressing the resulting curds into soft white blocks.Widely used in East Asian and South East cuisines.I was using tofu for the first time and it has a subtle flavor.It can be used for sweet and savory dishes.Tofu has low calorie count and very high protein and low fat unlike paneer/cottage cheese.Depending on the coagulant used,tofu can be rich in calcium or magnesium too.That's how I ended up buying tofu and preparing the pizza out of it.Pizza turned out very good and as always home made one with wheat flour is very filling & healthy as well.I used the store brought Pizza sauce,you can use your desired one..Check this out !!






Ingredients
Whole wheat flour 3 1/2 cup
Yeast 4 tsp
Warm water 1 1/2 cup
Sugar 1 tsp
Salt 1 tsp
Olive oil 1 tbsp
for topping
tofu 20 -25cubed pieces
button mushrooms  8 oz pkt(220 g)
garlic cloves 5 sliced(optional)
bell pepper 1 thinly sliced
pizza sauce 6 tbsp
pizza seasoning 1 tsp
mozarella cheese 4 tbsp grated
parmesan cheese 2tbsp
olive oil 2 tbsp
pepper powder 1/2 tsp
salt to taste



Method
-Add the yeast in warm water along with sugar and stir.Keep aside for 10 minutes until it starts frothing.
-Sift the flour in a bowl ,add salt .Sift again.Add the olive oil and yeast mixture  and knead with hands to form a dough.
-Knead the dough smothly,place it in a covered bowl and leave to rise for 1 hour.
-Punch out the air  and knead again,leave aside for 45 minutes.
-In the mean time,prepare the topping.Heat oil in a non stick pan preferably and shallow fry the tofu cubes till its slightly browned on all sides.Add half of the pepper powder and salt.Remove on a plate with paper towel.Divide the fried tofu into 2.
-Add the sliced mushrooms & garlic in the same oil and saute till the water starts leaving from mushrooms and it changes color when cooked.Add the remaining pepper powder and salt.Put off flame.Cool it down and divide into 2 equal portions.
-Preheat oven to 425 degrees F.Prepare a pizza pan by smearing oil at the base and adding little bread crumbs on it so that the dough doesn't stick and easily moves.
-Roll out the dough on a clean flat surface after dusting little flour to a diameter of 10" and 1/4" thickness.Transfer it into the pizza pan.
-Prick with a fork in between the rolled base.Top it up with the pizza sauce evenly and add the first part of cooked mushrooms and first part of tofu on top.Add the thinly sliced bell pepper & pizza seasoning.Finally finish off with grated mozarella cheese,parmesan cheese to garnish.
-Brush the left over sides of pizza base with olive oil ,gives a nice color.
-Place it in the oven and bake for 16-20 minutes and remove from oven.
-Repeat the same with the other part of the dough and use the reserved toppings.
-Remove from oven and cool a bit ,cut into pieces and serve with tea or as brunch /dinner!!




Servings ~2 pizzas of size 10" & medium crust

NOTES
*The topping mentioned is for 2 pizzas,please adjust the ratio if you're making only one.
* If you are fond of thinner crust,roll out the crust really thin.
* If you want a pizza thick ,then use the whole dough and roll out to make one.
* You can add tomato slices instead of  bell pepper slices.
* You can also try your desired topping keeping the base recipe same.
* The shallow fried tofu and mushroom can be seasoned with italian herbs.
* Half of the dough can be refrigerated if covered with a cling wrap and can be used later within a week.

My first Pizza -Apple Pizza (whole wheat flour base)

Baking a pizza at home,never thought.. but when I saw many of my blogger friends making this at home,It was a real energy booster and inspiration to try.I too thought to give this a shot and when I actually started off making pizza,I was not very sure of the outcome as I was giving a try to make it from scratch including the pizza base too and I wanted it to be with wheat flour alone.And so,am happy that I could try this at home and another true experiment,the outcome is right in front of you  :-).The topping I chose is apple,you can make your desired topping veg or non veg and sauces,cheese of your choices.But let me tell you a thing if you have kids who have stopped looking at apples then this is a wonderful idea to sneak in their apples and a perfect healthy one.I made the topping just like for the Apple Cinnamon Toaster Strudel,and that really tastes great.I was pretty much sure kids wouldn't say 'NO' to the prepared topping as they liked the toaster strudel and that's how I got into preparing this recipe and sharing it with all my dear buddies :-)




Ingredients
whole wheat flour 1 3/4 cups
olive oil 1/2 tbsp
warm water 3/4- 1cup
yeast  2tsp
sugar 2tbsp (or increase if you want the crust more sweet)
salt

for topping
apple 3 grated + 1 thinly sliced for top layer
butter 3 tbsp
brown sugar 1/2 cup
all purpose flour/ maida 2tbsp
cinnamon powder 1/2tsp (optional)
salt



Method
-Add the yeast in warm water along with sugar and stir.Keep aside for 10 minutes until it starts frothing.
-Sift the flour in a bowl ,add salt .Sift again.Add the olive oil and yeast mixture  and knead with hands to form a dough.
-Knead the dough smothly,place it in a covered bowl and leave to rise for 1 hour.
-Punch out the air  and knead again,leave aside for 45 minutes.
-In the mean time,prepare the topping.Wash ,peel and core the apples.Grate the apples on the large holes of grater. Add in the lemon juice and keep aside.
 -Melt 2 tablespoons of butter over medium heat in a sauce pan. Add the grated apples and toss until coated.
-Add the brown sugar, flour, lemon juice, cinnamon, and salt. Continue to cook stirring frequently, until the mixture is thick and syrup(took about 10 minutes). Remove from heat and stir remaining 1tablespoon of butter. Cool the filling .
-Preheat oven to 425 degrees F.
-Roll out the dough on a clean flat surface after dusting little flour to a diameter of 10" and 1/4" thickness.
-Prick with a fork in between the rolled base.Top it up with the prepared topping and spread evenly with the back of a spoon or offset spatula.
-Brush the left over sides of pizza base with olive oil ,gives a nice color.
-Place it in the oven and bake for 12 minutes first and remove from oven.
-Wash the remaining apple and slice it to spread.Spread the thin apple slices and then bake for another 6- 8 minutes until the top slices are baked and the crust gives a nice color.
-Remove from oven and cool a bit ,cut into pieces and serve with tea!!


Servings~ 1pizza of medium crust & 10" diameter(dinner plate size)

NOTES
* You can add jaggery instead of dark brown sugar.
* You can place the sliced apples on top in the first bake itself,if you wish it to be crunchy.I was not sure whether my kids would like the slices so just baked them.
* You can even add few nuts or raisins when you prepare the topping.
* Add in a scoop of ice cream or whipped cream after cooling the pizza slice and can be served as a dessert too!!
