Dried Fenugreek leaves Focaccia & Cheese Sauce Dip

Focaccia is a flat oven baked Italian bread which may be topped with herbs or other ingredients.It is similar to the pizza dough in style & texture but not considered to be the same.Focaccia dough consists of high gluten flour,oil,water,salt & yeast.It is typically rolled out and pressed by hand, into a thick layer of dough and baked in a stone bottom or hearth oven.They also poke with a knife,make  dents with fingers or with the handle of a utensil to poke the unbaked bread.I tried the focaccia bread for the first time,mine got a bit browned on top as someone was at the door at the time I could remove it from oven and missed the time and removed at 20 minutes but I think 15 or 16 minutes was good enough.Will update new pictures once I bake it again.The bread was flavorful and we had it with cheese sauce.Do check this out !!


Ingredients
for foccacia
whole wheat flour 1 cup
all purpose flour 1/2 cup
active dry yeast 1/2 tsp
sugar 1tsp
salt 1/2 tsp
olive oil 2tbsp
dried fenugreek leaves 2 tbsp
red chilly flakes 1 tbsp
mozarella cheese pieces 8 small cubed pieces
for cheese sauce
butter 1 tbsp
all purpose flour 1 tbsp
milk 1/2 cup
shredded cheese 1/4 cup
black pepper a pinch
salt


Method
for focaccia
- Mix in the yeast,sugar and warm water.Wait till its frothy for 10 minutes.
- Sift the flours ,add salt.Add the yeast mix and knead to form a dough.
- Add 1 tbsp of oil in a bowl and place the dough in it.Leave aside to rise for 1 hour.
- After 1 hour,knead again and leave aside for another half an hour.
- Pour 1 tbsp of olive oil in a tray and place the dough in it.
- Pre heat oven to 450 degrees F.


- Now place each pieces of cubed cheese in it and stretch the dough towards the sides as you place it.
- Add the fenugreek leaves and red chilli flakes on top.Press down slightly.
- Make dents with finger in the dough, form little dimples.Sprinkle with some salt and drizzle or brush olive oil.
- Place & bake in the oven for 16-20 minutes.Remove from oven and serve hot !!

for cheese sauce
- Melt the butter in a pan and stir the flour and mix well without lumps.
- Using the whisk ,add the milk little by little and mix well,let it thicken.
- After you get a smooth sauce,Continue to whisk the sauce on low medium heat.
- Add the shredded cheese 2 tbsp at a time and stir until incorporated.
- Remove from heat and whisk in salt & pepper.



Servings~ 1 loaf & a small bowl of sauce

NOTES
* Keep a watch at the focaccia baking time after 15 minutes.
* You can modify with other herbs and spices.Also,you can increase the amount of red chilli flakes.I reduced it to keep it mildly spiced(just to feed my kids).
