Mutta Churul | Kerala Crepes

The original version of Crepes may not be similar to this.But I love calling this as a modified crepe as it has flour,eggs and sugar.This is a Kerala style crepe which makes it a filling start.I usually prepare this as breakfast and my sons love it.Usually all purpose flour or maida is used to make this recipe but I usually modify it up with wheat flour.The actual shapes are rolled up cylindrically,but I make it this way for two reasons-the filling remains intact and secondly its easier for me to prepare.This is a good recipe for diabetics too(delete the sugar ).The recipe is very simple and can be even made as a healthy snack.Give this a try !!

Ingredients
wheat flour 2 cups
egg 1
salt a pinch

for filling
grated coconut 3/4 cup-1cup
sugar 1/4 -1/2cup
cardamom powder 1/2 tsp
roasted cumin powder 1/2 tsp


Method
Mix the coconut,sugar,and cardamom powder,cumin powder.Keep aside in  a plate.
Beat the egg in another large bowl.
Sift the wheat flour and salt.Add water and make it into a batter.Add the egg,wheat flour mix and blend it in a blender to make smooth batter as for dosas.
Place a non-stick pan and heat on a medium flame.Pour ladleful of  batter like dosa.Spread it like for dosas.
Flip the other side and then put a tbsp of the coconut mix on one half.
Fold the other half and press together to stick with the spatula.Remove on a plate.
Repeat the same steps till you finish the batter.Serve it on a plate and enjoy.


  • servings ~8-10 crepes
TIPS
*You can add a tsp of butter on the pan to add the taste.
* You can even make an eggless version,I have tried that too.Make a batter with wheat flour,salt and milk.Add a pinch of baking soda too.
