MINTY VEGETABLE BIRIYANI

The main attraction of this biriyani is the mint leaves.I usually make vegetable biriyani in the traditional way.But this was by chance ,I had the mint leaves in hand and I gave a trial.I must admit that that day everyone ate more than their usual course.



Ingredients

Biriyani rice 2 cups
vegetables (beans,carrot,peas,corn) 1 cup
mint leaves 5-6
onion 1 chopped
raisins and cashew 1/2cup
cardamom 2-3
cinnamon 1-2strand
clove 3-4
garam masala 1tsp
chilli powder 1/2tsp
coriander powder 1tsp
turmeric powder 1tsp
lemon juice 1tsp
coriander leaves 1/2 cup chopped
salt
butter 2tsp
oil 3tsp

Method

Wash and cook the rice 3/4th with turmeric powder(adds colour) and salt as needed(cooking instructions as per packet) .Drain the water and keep aside.

Place butter in a pan and heat it.

Add the raisin and cashew .Fry them and keep it in a plate.

Pour the oil and fry onions till brown.Remove and keep in a plate.

Add the spices whole into the remaining oil and saute.

Put the veggies(I used the frozen mix veg packet) and add the masalas,salt.

Grind the mint leaves into a thin paste and add to the veggie.

Cook for 6-7 minutes covered and then add the rice.

Pour the lemon juice and cover it .

Reduce the heat and steam for another 15minutes.

Garnish with fried onions,raisins,cashews, n coriander leaves.
