Carrot Halwa

Carrots are a real good source of beta carotene and should be included in the diet in any forms.Children love to eat it as  halwa.I have had plenty in my childhood days when mom used to prepare this dessert.A simple but elegant dessert that can be cooked by beginners too.Enjoy making this simple yet tasty dessert !!

Ingredients
carrots 6 grated
condensed milk 1/2cup
milk 1/4 cup
ghee 4tsp
sugar 5tsp
raisins and cashew 1cup
cardamom powder 1tsp


Method
Wash and grate the carrots using the smallest blade.
Place it in a cooker and add 2 tsp of sugar and milk.Close the lid and cook till 1 whistle.
Keep a nonstick pan and add ghee.
Roast the cashew and raisins and keep aside.
Add the cooked carrot to the remaining ghee.
Keep stirring till all water is evaporated.
Add the condensed milk and the left out sugar,dry it.Keep stirring until the carrots start to leave the pan.add the cardamom powder.
Garnish with the fried raisins and cashews.


  • Servings 4 adults
NOTES
* You can cook the grated carrots by adding milk in the non stick pan itself without using the cooker but it takes slightly longer to cook.
* You can even add mawa to make the carrot halwa richer in taste and texture.
